Michelle's Paleo Pumpkin Pie

Michelle takes a super simple and easy approach to eating clean and healthy. I just love her and her work! 

She was SO kind to let me share her Paleo Pumpkin Pie recipe with my community!

She's the best! 

It’s paleo and healthy enough to have the leftovers for breakfast! 

Wait... what?! 

Yes, exactly! This is what eating healthy is all about... you can eat ALL the THINGS, just use better and healthier ingredients! 


Paleo Pumpkin Pie Ingredients
 

  • 15 ounces canned pumpkin puree
  • 3 large eggs
  • ½ cup full fat coconut milk
  • ½ cup honey
  • 1 tablespoon pumpkin pie spice
  • ⅛ teaspoon Celtic sea salt
  • 1 Paleo Pie Crust (I like to pre-bake mine for 8 -10 minutes for a crispier crust!)

Instructions: 

  • In a food processor combine pumpkin puree and eggs
  • Pulse in coconut milk, honey, pumpkin pie spice, and salt
  • Pour filling into Paleo Pie Crust (recipe and instructions below)
  • Bake at 350°F for 45 minutes
  • Allow crust to cool, then refrigerate for 2 hours to set
  • Serve with coconut whipped cream (recipe and instructions below)  

Paleo Pie Crust Ingredients 

  • 2 cups blanched almond flour (not almond meal)
  • ¼ teaspoon Celtic sea salt
  • 2 tablespoons coconut oil, melted, or salted butter, cold
  • 1 large egg

Instructions:

  1. Place flour and salt in a food processor and pulse briefly
  2. Add coconut oil and egg and pulse until mixture forms a ball
  3. Press dough into a 9-inch glass pie dish
  4. Bake at 350°F for 8-12 minutes

Whipped Cream Ingredients:

  • 1 can of full-fat coconut milk
  • 1 tsp alcohol-free vanilla (optional)

Instructions:  

  1. Put the can of coconut milk in the fridge for a minimum of four hours.
  2. Open, and remove the hardened part only.
  3. Using a handheld mixer beat with vanilla (if using) until fluffy. This is so good you would think there is sugar in it!

This beautiful pie is full of nutrient-dense and real whole ingredients. What else do you need in your life?
